My Favorite Peruvian Comfort Foods
Depending on how long it has been since my last visit to my favorite Peruvian restaurant, my favorite Peruvian comfort foods can vary from classic lomos or milanesas, to pollo a la brasa, or a nice fresh ceviche chased with a pisco sour.My appetizer order always will include either a causa or papas a la huancaina. For the uninitiated, a causa is a Peruvian potato salad, served cold or hot. It has a slight resemblance to shepherd’s pie in structure, but with infinitely more subtle and savory flavoring. It can be as homespun as a layered mashed potato casserole with tuna or some other seafood filling, or for a more spectacular presentation, rolled up like a pinwheel and cut to show the swirled layers of potato and filling.
